Ingredients
  

  • 4 eggs
  • 2 tablespoons oil vegetable or sesame
  • 1 garlic clove sliced
  • 1 small onion sliced
  • 3-4 tablespoons chili crisp adjust to taste
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon soy sauce
  • 1 green onion chopped (for garnish)

Instructions
 

  • Heat oil in a non-stick or cast-iron skillet over medium heat until hot.
  • Add the sliced garlic and onion, frying until golden and crispy.
  • Push them aside to create four small nests for the eggs.
  • Crack the eggs into the pan, keeping the yolks intact.
  • Sprinkle with sea salt and black pepper.
  • Fry for about 2 minutes, letting the edges crisp up while the yolks remain runny.
  • Spoon chili crisp over each egg while still in the pan.
  • Let cook for another 30 seconds so the flavors meld.
  • If using, drizzle with soy sauce for extra umami.
  • Garnish with chopped green onions and serve immediately.

Notes

1. If you like your yolks firmer, cook for an extra minute.
2. Adjust the amount of chili crisp to your spice preference.
3. Serve over steamed rice, buttered toast, or noodles for a complete meal.
