They’re literally fried eggs in tortillas with some delicious toppings—nothing fancy or groundbreaking. But when the egg is fried just right, all crispy edges and runny yolk, and tucked into a warm tortilla with some cheese, salsa, and a slice of avocado, it totally feels tastes like more than the sum of its parts.

Expert Tips for Success
There’s not much to mess up here, but a few things make it better:
- Heat your skillet properly before adding the egg or the egg won’t crisp.
- Don’t overcook the yolk unless you’re into that.
- Warm tortillas make the whole thing more enjoyable. I heat mine directly over the flame on my gas stove, but if you don’t have a gas stove, you can heat them in a dry skillet.
