Ingredients
  

  • Cooking oil spray or olive oil spray
  • 1 large egg
  • ¼ cup feta cheese
  • Kosher salt
  • Chili crisp chili oil, or crushed red pepper
  • 1 flatbread round or tortilla warmed or toasted
  • ¼ avocado
  • Thinly sliced green onion julienned basil, or chopped fresh dill for garnish

Instructions
 

  • Spray a small (6- or 7-inch) nonstick skillet with oil and heat it over medium heat. Add the feta in a ring around the edge of the skillet.
  • Let the cheese heat up for a minute or two until it begins to melt and sizzle. Gently crack the egg into the skillet in the center of the ring of cheese.
  • Sprinkle the egg with salt and let it cook for a few minutes. Once the egg white has begun to set fully around the edges, drizzle chili crisp or chili oil over the top or sprinkle with red pepper flakes. Let the egg continue to cook until it reaches your desired doneness.
  • While the egg is cooking, toast the flatbread or tortilla and then spread the mashed avocado on top. Season another pinch of salt.
  • When the egg is cooked to your liking and the cheese has become golden brown and crisp, lift or slide the whole thing on top of the flatbread or tortilla.
  • Garnish with green onion or herbs and more of the chili crisp or chili oil if desired.
