Ingredients
- 6 large eggs
- ½ to 1 teaspoon kosher salt
- Spray oil see note
- 1 tablespoon chopped chives
- 4 flour tortillas
- 1 cup shredded cheese
- ½ teaspoon garlic powder
- 6 strips of cooked bacon broken into bits
- Hot sauce optional
Instructions
- Crack the eggs into a mixing bowl, and the salt, and whisk until the yolks are broken and the whites and yolks are combined.
- Spray a skillet with oil and heat it over medium heat. Add the eggs and push them around the skillet continually with a silicone spatula. Just before they are done, add the chives and remove from the heat as soon as the eggs are fluffy and just cooked through.
- Spray the air fryer basket with oil and lay one tortilla in the basket.
- Add most of a ½ cup of cheese to the tortilla and spread across the surface leaving a ½-inch border.
- Add half of the eggs on top of the cheese, then add half of the bacon. Add hot sauce, if desired, and sprinkle ¼ teaspoon of the garlic powder on top.
- Top with the cheese reserved from the ½ cup, then place another tortilla on top.
- Spray the tortilla with oil and cook for 4 minutes at 400 F. Gently flip the quesadilla and cook for 4 more minutes until both sides of the quesadilla are toasted and crispy.
- Remove the quesadilla and cut into 4 wedges.
- Repeat with the remaining ingredients to make the second quesadilla.
